I was googling around and stumbled uppon a WinUAE hack with avi-output.
Perhaps something useful?
I'm not sure it's in development these days.

Using www.archive.org way back in time machine I atleast found out what the last source package was called. Didn't find anything on google though. :(

Perhaps we should try the official (Win)UAE and check if there is possibility to implant re-recording? I think it has recording and avi output now days atleast.
