I always aim for whatever emulator that the TAS community uses because my logic is "if that's what the TAS community uses, it must be the best one right"? However, I've been reading around, and the users seem to have some rather large problems with the emulator. I've read one where their save game is erased when they start "Movie Record", non-functioning menus, stuff like that. I don't want to record TAS's, but I do want to record movies, so this sort of worries me a little. Therefore, I would like to ask if all these issues can be avoided, and if so, how?

If you mean something like a Let's Play, I'd recommend the latest beta of Project 64 and some screen-capture program; I don't know of any good emulator for recording and playback of input files and generation of videos from them other than Mupen64, although the Mupen64Plus project is getting there...

Well, if I try really hard, can I make the Mupen64 work, without having to play the entire game through in one go?

After you're recording and push save-state when you're stopping. Then when you want to go back where you left off, "play" your movie with read-only turn off, load your save-state.
