Looking good! Why is that lap skip only used/possible on the final lap?

Jumping around the finish line is only possible with boost, which you don't have on the first lap. Actually it's better explained in the description of the video:
Now on to checkpoint/lap skipping. Basically, there are 3 important checkpoints: 0 (just before the finish line), 1 (just after the finish line) and 117 (just before checkpoint 0). It's possible to skip from checkpoint 1 to 117 provided you're on the same lap and that you don't hit checkpoint 0. The thing is, the lap count and current checkpoint don't update if you're airborne and are not directly above the track, so you can just fly off to the side of the road while on checkpoint 1, go backwards until checkpoint 0 is cleared and then land back on the track to skip most of the lap. This is done twice to skip from the end of lap 1 (after first crossing the finish line to get boost power) to the end of lap 2, then again to go from the end of lap 2 to the end of lap 3.
