I would just like to know what is frame skipping and how can use it to shorten my videos? Specifically, how can use it to shorten my playing time when recording RPGs?

Frame skipping is used not to display frames of the game to help general emulation speed on slower machines. Your movie doesn't get shorter by dropping them, as every frame's is recorded, even if you skip it.

Frame skipping is only used to speed things up when you are playing a game in real-time. If your computer is slow, turning on frame skipping will skip the rendering of X number of frames per second, reducing the processing power required, but making the video look choppy. It all runs at the same speed, just with less frames rendered per emulated second. All game code is run normally, but some frames are just not given to the video card to display in order to save time. In a TAS, frame skipping is totally pointless since you are at least playing at a slow speed, if not frame-by-frame, and every frame of input is recorded and played back at full speed.

So what should I do to remedy the constant leveling up and grinding that is required for defeating certain bosses? How do I skip the batles altogether?

First question: a) Find the quickest way of doing so b) Find some strategy that will allow you to beat the boss without doing it, or maybe even circumvent it. Second question: Depends on the game. Some RPGs, like Dragon Warrior, allow just that by waiting some frames before moving on. Others, like in pretty much any Final Fantasy, skipping combat isn't possible. If what you are talking about is that you've already recorded such battles and you're wondering how to excise them from the final movie, you'll have to convert it into a video file like AVI or MKV and do some video editing. You won't be able to do that within the emulator itself because the movie files those play back are input files, and removing input can, and most likely will, cause issues.
A hundred years from now, they will gaze upon my work and marvel at my skills but never know my name. And that will be good enough for me.
