Kirby was picked for how fast he can KO opponent. Forward throw, neutral b (inhale) and the spike on the up-b falling down.
The up-b spike speed is around 170 units per frame and that's regardless of percentage of the opponent.
Another consideration was fox for his shine (down-b) on multi team. He has a faster btp (3 seconds faster), runs really fast for race to the finish but there was no way to compete on any 1 vs 1 match compared to Kirby. On Fox's stage, the blast zone is so low, it takes forever to reach it and fox is not equipped with good spikes to deal with this.
Kirby is the 2nd strongest character in the game only behind Pikachu but he lacks moves to deal efficiently with team matches, he also doesn't have a spike for the samus lava quick kill or any of the 1 vs 1.
Finally dk was considered as his up-b is a trivial way to deal with multi team stages and you can cargo suicide on 1 vs 1, but it's overall slower. His board the platforms is also 12 seconds long so that would be almost 8 seconds deficit just there and he couldn't catch-up on race to the finish either.
The order in which the opponents appear is always deterministic, regardless of who you pick, compared to other smash games. The only thing RNG affects is who are your teammates on Mario Bros and Giant DK, which is what we are referring to. On fox we delay the kill on him to get dk as an ally vs Mario Bros, otherwise we would have had Link as an ally, taking a little longer to load the battle.
As a side note, we had no problem with it on Giant DK, we got decent allies to load

I don't think we can deal with them otherwise. For yoshi would be about more than 50 frames to set up a f-smash or d-smash and they take a long time to attack, so it's already slow.
Kirby's are tough to kill even with up-air, besides they have to be as close to the edge as possible, otherwise they won't die directly, because waiting for them to die on their own is just too slow.
Mario Bros could be the occasion where it's possible to be faster avoiding that and the no damage bonus by using another strat, but certainly, the rng prevents us from doing so. If we take damage on the fireball, mario will up-b, so we need to threaten with an up-air for him to roll. Also we didn't have time to do a landing up-b because luigi was barely reachable if we hit him with the first part of the move.
Well for samus is just better to attack her with aerials as well, doesn't cooperate if we want to do any ground move, and d-air spike is the best option to kill her faster instead of f-smash.
These are specific instances where doing quick kills is a better option than trying to avoid the bonus itself. While in mario bros, theoretically it could be, it should be noted that it could change the rng detrimentally in other stages, such as pikachu no longer wanting to cooperate in a good way, making the compensation for avoiding those bonuses practically nil.

Really fantastic, I had settled for Chef Stef's TAS and I thought that 100% of this game would not be very interesting, but this was very enjoyable to watch.

This is because there is no way to avoid it other than jumping in those parts or with a ramp, but the latter is much slower; Although before the time trial, aku aku allowed me to receive damage to collide with the buoy and pass that part without jumping, it would not matter, since to obtain aku aku it is necessary to jump, both in normal mode and in time trial

Well ... sorry about that, basically there is not much to do in those parts, besides when I tried to do some maneuvers on the carpet, the rest of the levels would change abruptly, either I could not reach certain platforms or there was several lag frames, the same with the surf levels, so I decided better not to make so many movements in these sections to avoid complications that affect the completion time. Anyway, I'll post a submission with improvement.
