I think the plants in the show have been genetically magically modified. ;)
Either that or their bodies adapted/evolved to become immune to most of those problems during the thousands of years they've existed. There is also that "poison joke" from Bridle Gossip that causes strange reactions in ponies.
Potatoes are also listed as poisonous to horses. For the life of me I can't remember if there's any scene in the entire series involving potatoes in some form... Maybe not.

but I say it's around when Spike was still alive because of how "fresh" the tombstones are.
I've always imagined something like one of the following to happen:
1. She's constantly tormented with hallucinations of her friends, and she's aware that she's nuts. Yet she'll never let that bother her since insanity is inefficient.
2. She continues her work in isolation, and eventually becomes something like Nightmare moon. And yet she still hasn't disposed of the princess. Not because of love or anything, but because they're unattackable NPC true immortals (as opposed to being biologically immortal).
3. She gets over it in (somewhat) after 2 centuries.
Also that 4th wall.
So people will always remember.
