Is there an option for this? I assumed it was the User Prescale option, but that doesn't seem to do anything. I'm just looking for the option to increase the internal resolution, if there is one.

There is no such option, because the mednafen PSX core lacks such an option.

Well like zeromus wrote it doesn't. If you want pseudo like. (Make sure you're running a PS1 game first) PSX > Options > Mednafen Mode (4:3 AR) > Horizontal Overscan Clipping: Clip to Framebuffer Config > Display > User Prescale: 1x > Hq2x (Yup) Final Filter: None or Bilinear Then just use the internal View > Window Size for what you want. Alternatively go grab libretro/RetroArch and use their Mednafen/Beetle PSX HW core (or the Mednafen/Beetle PSX – PGXP core) if you want mednafen to have upscaling.

Okay, thanks for the answer. Is there any chance or plan to add upscaling?
